Curry Chicken Salad Sandwich for Afternoon Flights

For years, I thought bringing homemade food on a flight sounded like something only the ultra-organized travelers did. Then I found myself paying way too much for an airport sandwich that was somehow both dry and soggy at the same time, and I decided there had to be a better way. Now, making my own travel snacks before a trip is just part of my routine. It saves money, tastes infinitely better, and helps me avoid that familiar airport dilemma of choosing between fast food or whatever happens to be left in the grab-and-go cooler.

This curry chicken salad sandwich is one of my favorite options for afternoon flights because it’s filling without being heavy, and the curry gives an ordinary chicken salad so much more personality. The sweet grapes, crisp apples, crunchy almonds, and creamy Greek yogurt all come together in a way that feels fresh instead of boring. 

I usually pack it on toasted ciabatta or sourdough, but it’s just as good spooned over a bed of greens if you’re skipping the bread. Just be sure to keep the dressing thick rather than runny so you don’t run into any issues with TSA or end up with a soggy sandwich by boarding time. It’s an easy recipe that feels a little special, even if your destination is only a short flight away.

Curry Chicken Salad Sandwich

Ingredients
  

  • 1 1/2 lbs cooked chicken breasts about 4 cups, diced
  • 2 celery ribs diced
  • 2 green onions sliced
  • 1 apple peeled and diced
  • 1 cup red seedless grapes halved
  • 1/2 cup toasted almonds
  • 1 Tbsp curry powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 Tbsp lime juice
  • 1 Tbsp honey
  • 1 1/4 cups greek yogurt
  • 4 large slices of bread focaccia, sourdough or ciabatta
  • Micro greens

Instructions
 

  • Preheat the oven to 375 degrees.
  • Grease a pan, sprinkle the chicken breasts with salt and pepper, then bake for 20-25 minutes. Remove from the oven, let cool and dice.
  • Add all ingredients into a bowl and mix.
  • Toast bread and top with chicken salad and micro greens.
