Italian Muffuletta Sandwich

Ingredients
  

  • 1 Loaf Ciabatta or Focaccia
  • 1/4 cup Pesto
  • 1/4 cup Balsamic Vinaigrette or 2 1/2 Tbsp olive oil and 1 1/2 tbsp balsamic vinegar
  • 3 Tbsp Kalamata Olives chopped
  • 1 Tbsp Capers
  • 1/4 cup Basil rough chopped
  • 1/2 cup Artichoke Hearts chopped
  • 1/2 cup Roasted Red Peppers chopped
  • 6-8 oz Charcuterie like salami, soppressata or prosciutto
  • 6 oz Provolone Cheese sliced

Note: double these ingredients if you like your sandwiches extra thick

Instructions
 

  • Slice bread horizontally.
  • Spread pesto on the bottom slice, and balsamic vinaigrette on the top.
  • Layer the rest of the ingredients in the order listed.
  • Put the top layer on top of the bottom. Wrap the entire sandwich in plastic wrap, then put in the refrigerator with something heavy on top of it (like a cast iron pan) to help meld the flavors together. Leave it weighted for at least an hour, though overnight is even better.
  • Slice and serve.
